Strawberry Shrub
The basic recipe is equal parts fruit, sugar, and vinegar but depending upon your tastes you can adjust it to your liking.
Ingredients
- 1 Cup strawberries
- 1 Cup sugar
- 1 Cup cider vinegar
Instructions
- Wash the strawberries, then hull and quarter them.
- In a medium, non-reactive bowl, place the prepared berries and add the sugar. Mash the berries with the sugar; then cover and refrigerate for 24 hours, to allow the berries to release their juices.
- Into another bowl, strain the berry mixture, pressing to get as much liquid as possible from the pulp. Scrape any undissolved sugar into the bowl as well and add the vinegar. Whisk to help dissolve any remaining sugar; as the shrub rests the vinegar with continue to dissolve the sugar.
- Transfer the mixture to a bottle and refrigerate or serve immediately over ice.
